After slaving away at work all day, the last thing you want to do is spend hours at the kitchen to make dinner. You want something uncomplicated yet tasty and healthy. How about a meal in only 10 minutes and made from only five ingredients?

Yes, it’s possible. Here are four dishes from avid foodie Jules Clancy, author of 5 Ingredients 10 Minutes and blogger at Stonesoup. She’s a huge fan of fuss-free, easy-to-cook meals, so if you want to get food on your table fast, give these recipes a try!

Beef & Broccoli Stir Fry

Do you know that broccoli has anti-cancer properties? It’s a powerhouse of healthy benefits, but be careful not to overcook it. This recipe combines juicy beef with nutritious broccoli in one dish – hearty and healthy at the same time!

Ingredients (Serves 4)

  • 300g minced (ground) beef
  • 1 head broccoli cut into bite-sized pieces
  • 2 cloves garlic, peeled & finely sliced
  • 2 tsp oyster sauce • coriander, roughly chopped with some stems included

  1. Boil water in a saucepan with some salt. Cook the broccoli for 2 minutes and drain.
  2. Heat 2 teaspoon olive oil in a frying pan and stir fry the beef until dark brown. Add the garlic and cook for a minute.
  3. Add the broccoli and oyster sauce. Season and taste.
  4. Sprinkle with coriander and serve.

Chorizo with Chickpeas & Tomato

Chickpeas or garbanzos have a distinct nutty taste and buttery texture, while chorizo is one of those wonder ingredients that can transform an otherwise boring dish into something sensational. When combined, these two taste heavenly. Jules mentioned something about this dish having “seduction powers”, so you might want to dig into this one with your girlfriend to know what she means.

Ingredients (Serves 2)

  • 2 chorizos (approx. 200g or 7oz), sliced
  • 1 can chickpeas (400g or 14oz), drained
  • 2 tsp smoked paprika, optional
  • 1 punnet cherry tomatoes halved
  • 1/2 bunch flat leaf parsley roughly chopped

  1. Heat 2 tablespoons of olive oil in a frying pan.
  2. Stir fry the chorizo until they’re brown.
  3. Season and add tomato and parsley.

Simple Minestrone Soup

This one is pleasing on the palates and soothing to the soul especially on a cold, bleary evening. Courgette is rich in vitamins C and K, as well as potassium, and most of its nutrients are in its thin rind, so don’t bother to peel it. To avoid a food rut, Jules recommends replacing courgette with cabbage or baby spinach, and the canned tomatoes with tomato puree or tomato pasta sauce.

Ingredients (Serves 2)

  • 1 medium courgette (zucchini) finely sliced into coins
  • 2 cloves garlic, finely sliced
  • 400g can tomatoes
  • 400g can cannellini beans or other white beans
  • 4 tbsp pesto, to serve

  1. Cook Heat olive oil in a large saucepan.
  2. Cook the courgette and garlic over a medium-high heat for a few minutes or until the courgette is starting to soften.
  3. Add the tomatoes and beans and include the liquid from both cans. Simmer for another five minutes or until the courgette is cooked through
  4. Taste and season.
  5. Serve hot with the pesto on top.
  6. Season and serve with parmesan.

Pasta with Sausages & Crushed Peas

Pasta should be on everyone’s list of quick meal options not only because cooking it is a no-brainer, but also because of the endless ways you can prepare it. Here’s one hearty pasta dish that combines the lovely richness of sausages with the healthy goodness of peas. The mint gives it extra kick. Bon Appetit!

Ingredients (Serves 4)

  • 350g (3/4 lb) short pasta
  • 4 pork & garlic sausages
  • 250g (1/2 lb) frozen peas
  • 1 bunch mint, leaves picked
  • 2 large handfuls grated parmesan cheese, plus extra to serve

  1. Boil water with some salt in a saucepan. Cook the pasta (buy one that cooks in about 8 minutes or less).
  2. Heat 3 tsp olive oil in a large frying pan.
  3. Remove sausage skins and crumble them into the pan.
  4. Cook while stirring frequently until the sausages are brown.
  5. Add the peas, squashing them down as they cook.
  6. Add the mint and remove from the heat.
  7. Drain the pasta and set aside a cup of the cooking water.
  8. Add the pasta to the sausage mixture and sprinkle with parmesan cheese. Add some of the cooking water if it looks a little dry.
  9. Season and serve with parmesan.
